§1What this business is
Fresh shoots (peak season June to October) are peeled, washed and sliced. For pickle they are boiled to remove bitterness, cured in brine, mixed with spices such as king chilli and with oil, and packed in jars. For canning they are graded, boiled, packed in brine, sealed and sterilised in a retort. Buyers are households, restaurants, caterers, provision stores and supermarkets.
Capacity: Pickle unit: 300 kg a day (10-hour shift), 40% in year 1. Pickle-and-canning unit: 1 tonne of shoots a day, 240 tonnes a year (installed 100 t pickle and 150 t canned shoots), 50% in year 1.
§2Is it right for you?
Who it is for
Someone in the north-east or another bamboo region who knows local food tastes and has links to stores and restaurants.
Who it is not for
Someone far from bamboo forests or without food-processing experience.
Advantages
- Few processing units, so the ready market is open, says the report
- Turns a short-season crop into a year-round product
- Strong local food culture in the north-east
- Raw material is plentiful in bamboo-growing regions
Drawbacks
- Fresh shoots are available only from June to October
- Demand outside the north-east is still small
- Canning needs strict sterilisation and can-seal quality
- Shoots are bitter and spoil quickly if not processed fast
Skills you need
- Shoot boiling, brining and curing
- Pickle recipes and canning
- Food safety and FSSAI compliance
- Selling to stores, restaurants and bulk buyers
Why difficulty 3/5: Simple pickle making, but seasonal supply and canning safety need careful planning.
§3Market
Who buys
- Households
- Restaurants and caterers
- Provision stores and supermarkets
- Bulk buyers
How it sells
- Distributors, wholesalers and retailers
- Consumer packs in stores and bulk packs for institutions

Good to know
- The north-east is India's largest bamboo producer, but shoot production mostly meets local needs, says the report.
- Fermented shoot foods such as soibum, soidon, mesu and eup are popular in the north-east.
