§1What this business is
Milk is boiled and curdled with citric acid or lime juice; the whey is drained to get chhena (17% recovery assumed). The chhena is kneaded into small balls, cooked in 60° Brix syrup and moved to 50° Brix syrup with flavour. 22–25 rosogollas go into each sterilised A-2½ can, topped with syrup, sealed and processed under pressure, then cooled. Canning makes transport easier and the product is also exported.
Capacity: 6,00,000 A-2½ cans a year worth ₹3.18 Cr (₹53 a can); single shift.
