§1What this business is

A dough of soya flour, oil and wheat flour is kneaded, cut and wrapped by hand on wooden sticks, boiled for 30 minutes, cooled in cold water, blast-frozen, packed and kept in a cold chamber until it goes out through the cold chain. Soya chaap is a high-protein vegetarian food cooked in gravies or as a snack; the DPR says 200 g gives almost 30 g of protein.

Capacity: 100 kg an hour, one 8-hour shift, 300 days = 2,28,000 kg a year after 5% wastage; the DPR starts at 35% (79,800 kg) and reaches 55% in year 5.

§2Is it right for you?

Who it is for

Someone with links to restaurants, dhabas and frozen-food distributors in North Indian cities.

Who it is not for

Someone in an area without reliable power or cold-chain transport.

Advantages

  • High-protein vegetarian food with growing demand — the DPR quotes 15–20% annual growth
  • Small working capital (₹3.89 L)
  • Cheap, easily available raw materials
  • Gross margin improves to over 26% by year 5

Drawbacks

  • Needs a cold chain all the way to the shop
  • Cold chambers are the biggest cost (₹16.00 L for two)
  • Wrapping dough on sticks is manual work
  • Retailers need freezer space to stock it

Skills you need

  • Dough making and product consistency
  • Running blast freezers and cold rooms
  • Food hygiene and FSSAI rules
  • Selling to HoReCa and frozen-food distributors

Why difficulty 3/5: Easy recipe, but cold-chain distribution makes or breaks the business.

  • Caterers

Good to know

  • The DPR prices a 1 kg pack at ₹90 in year 1, rising ₹5 a year.
