The story
Hathras processes raw asafoetida resin, which is imported mainly from Afghanistan and Central Asia, into the compounded hing used in Indian kitchens. Family firms have done this for generations, blending the resin with flour or gum and packing it for markets across India and abroad. Hathras hing has a GI tag and is one of the district's ODOP products.
