The story
Kolhapur district lies in the Panchganga and Krishna valleys, where black soil and canal water support large sugarcane farms. Farmers have long boiled cane juice in open pans at small crushing units called gurhals, and the Kolhapur market committee became one of India's main jaggery markets. The jaggery is known for its golden colour and taste, and got a GI tag in 2014.
